A New Type of BBQ: Hog and Tradition

Hog and Tradition BBQ No 1

It has always amazed me how many types of BBQ are available. From Texas-style to Kansas City the many sauces, rubs and cooking methods make for interesting eating. A totally new type of “Q” was introduced a couple of months ago in Henderson…Hog and Tradition. It is inspired by the flavors of the Dominican Republic and people are beginning to take notice.

This is the second location of this growing chain that has the original spot in Salt Lake City. What is the excitement all about?

First of all, there is a large list of sandwiches. The Smoked Cubano fits the theme well. Pulled pork, sliced ham, Swiss cheese, pickles, chipotle mayo, chimichurri and mustard all combine for a rush of flavors.

Simple names like “Sharp”, “Stacked” and “Original” are variations of other sandwiches with combinations of meat, pickles and other tempting ingredients. The Brisket Grilled Cheese features a mound of smoked meat, mozzarella cheese, ruby sauce, spicy mayo and pickled onions.

The restaurant is helmed by Chef Geoff Patmides who was greatly influenced by his grandmother who continually presented him with great meals with international influences, much like the Caribbean region has.

Combos come with a choice of meat and innovative sides that are full of flavor. Five different proteins ranging from smoked brisket, pulled pork, chicharron, ribs and chicken are all available.

Side choices will make you dizzy as there are so many. A simple mac and cheese is flavorful along with sweet plantains. Sweet apple slaw has a nice fruity taste to it along with arroz con habichuelas (rice and beans). Fries, baked beans and mac salad are also tempting. One must order is the candied purple yams that are topped with whipped cream. They aren’t too sweet and the cream balances out the flavors well.

Bar Bites are a part of the mix with wings that are served as a dozen or half dozen. The sauce choices are part of the experience. Hog Rub is the most popular along with Honey Buffalo. If you want a little sweetness order the Ruby and if you are partial to the Carolinas take a taste of Carolina Gold.

They also feature a smash burger. I’m not sure where all of the smashing started but you sure seem them everywhere. This version features two patties with bacon, American cheese, onions and spicy mayo.

The Hog Fries will fill you up for days. Potatoes, pulled pork, shredded cheese, Pico de Gallo, pepper jam and ruby sauce make for a tempting mound of goodness.

There are two desserts that are worth consideration. Ube Cornbread is something you won’t find anywhere. It is dark like cake but has a constitution like regular cornbread and a subtle flavor. A traditional cobbler is another pick.

Hog and Tradition is a nice addition to the growing list of memorable BBQ in the region. The place is family friendly and the price is right.
