One of the things my wife and I do on Sunday mornings is to attempt to find a dining spot that doesn’t have a long wait. The Corner Bakery in Henderson fits the bill.
It has a moderately-priced breakfast menu that will please everyone. The stand-along building was put up a few years ago and the community has embraced it since.
The chain currently has about 100 locations throughout the country but the Henderson spot is the only one in the valley. I’m a little surprised that the owners haven’t opened more locally.
If you are looking for a classic breakfast there are two choices that I have enjoyed many times. Not only are they tasty but somewhat healthy as well.

The Anaheim Scrambler features eggs, bacon, green onion, cheddar cheese and avocado. It comes with thinly-sliced crispy toast with sugar sprinkles on top.
Another egg choice is the All American Scrambler with a side of bacon. You can order traditional bread if you aren’t in the mood for the crispy option.
Pancakes are well represented with three picks that include a choice of meat and eggs.
Breakfast sandwiches are stacked high. The Anaheim Panini is a pleasant looking specimen sitting on the plate. Along with scrambled eggs are tomato, lettuce, black pepper, and balsamic aioli, all spaced between two slices of white toast.
Overnight oats are becoming popular with the health conscious and their version starts with rolled oats. Mixed in is vanilla yogurt, apple, banana, dried currants and cranberries, strawberry, blueberry and toasted almonds.
After breakfast you might want to come back later in the day as they serve food all day. A quartet of soups are great for the winter months. Loaded Baked Potato features a baked spud served in a bowl with bacon and chives. Roasted Tomato Basil is just that, a creative pairing of the two ingredients.
Sandwiches are highlighted with Chicken Pomodoro, with grilled meat, provolone, basil, spinach with grilled sourdough.
For greens the Harvest salad is a creative collection of veggies and fruits. Apples, cranberries, bleu cheese, walnuts and croutons are immersed in balsamic vinegar. A chopped salad is another crowd pleaser. Romaine lettuce and other goodies like avocado, tomato, green onion, bacon and chicken are flavored with vinaigrette.
For lunch or dinner feast your eyes on Shimp Scampi Linguine, a classic with parmesan, noodles, garlic butter, tomato, fresh parsley and lemon juice. Chicken Rosa Pasta is enhanced with cavatappi pasta, pesto, tomato crem sauce and toasted bread crumbs.
As you might expect there is a large collection of baked goods that should fulfill anyone’s desire for something sweet. A list of muffins includes blueberries or chocolate chips. Cinnamon rolls fit the bill along with bagels with cream cheese. Cream cheese brownies and lemon bars are great any part of the day.
Whether you just want a sandwich, some eggs with toast or a healthy salad, The Corner Bakery delivers all day.
