I used to think cruising was boring – until I got older! Now I like returning to the same room each night and not having to pack and unpack numerous times, while still getting to see so many beautiful places.
So when my nephew told me he was getting married on a cruise ship, I was delighted. Yup, right up my alley!
Being with my family is always fun and my nephews and their wives and children are a delight. They’re fun and funny, love getting into mischief and are always coming up with new forms of entertainment.
The glue that holds us together is that we like each other and we like being together. And that’s really special.
One of the things we have in common is that we enjoy food and like tasting new things. On the cruise, at dinner, we usually ordered at least two dishes for the table so we could all have a taste.
It made for some fun conversations. For dinner the last evening, one of the dishes we ordered was a Chinese specialty that came with a side of fried rice.
My nephews decided mine’s better. (I told you I adore them!)
I had friends over for dinner last week and one of the dishes I served was my fried rice. It was a big hit and since so many of us enjoy it, I thought you might like to try it.
Pat’s Fried Rice: Refrigerate 2 cups cooked Jasmine rice overnight. Make sure rice is slightly al dente as it will cook further later. In frying pan, melt 1 tbs. butter (yes, butter), add two beaten eggs. Let form a thin pancake.
Remove from pan, cut into strips and set aside. Add 2 tbs. butter to pan, add 1 medium onion, diced and 3 cloves garlic, minced. Saute until onions are translucent, 6-7 minutes. Add ½ tsp. each salt and pepper. Add cold rice and break up. Add ½ cup cooked carrots, 1 cup frozen peas and 3 thinly sliced green onions, 3-4 Tbs. soy sauce and 2 tsp. Oyster sauce. Saute an additional 5-7 minutes. Add in eggs and stir to combine. Take off heat. Stir in ½ tsp. toasted sesame oil.
