Luke’s Lobster is the brainchild of Luke Holden, a man who grew up as a lobsterman, going out to sea to collect the freshest specimens available. He started opening restaurants back east and the new location in Las Vegas is the first in the west. He became a restaurateur because most of the rolls he sampled were over-filled with mayonnaise and celery plus the quality of the seafood wasn’t up to par. To ensure freshness, all of the lobster Luke’s catches in Maine is immediately taken directly to a distribution center, packed in protective bags and then sent south. It takes five to six lobster claws to fill each roll. Luke’s versions are delivered in a griddled New England split-top bun with no fillers. It leaves a pure taste that brings out the natural flavors of the shellfish.
Lobster is king here but there are some other items that are noteworthy. Crab and shrimp rolls are two popular items. The shrimp are large, plump and juicy and are cooked just right.
